Thanksgiving Spritz Cookie Recipe

Spritz cookies are a classic holiday treat, known for their tender, buttery texture and delicate designs. These cookies are made using a cookie press from Wilton. This particular set comes with Thanksgiving Turkeys and Pumpkins, which make it a twist from traditional Christmas cookies. We used Lorann Princess flavor for a delicious change from traditional spritz cookies flavored with vanilla and almond. Feel free to replace princess with your favorite flavor.

Ingredients

  • 1 cup butter (2 sticks), softened
  • ½ cup sugar
  • 1 egg
  • 1 ½ teaspoon Princess emulsion
  • 2¼ cups all-purpose flour
  • ¼ teaspoon salt
  • orange color
  • brown color
  • red buttercream icing
  • green buttercream icing
  • orange buttercream icing
  • black buttercream icing

Instructions

We've made two batches. One using orange color and the other batch for the brown turkeys. Each batch makes about 40 spritz cookies.
We've found that this particular press works best when we pull the trigger two times to get the shape to completely stick to the pan. Make sure to use a regular baking sheet (no parchment paper and not a non-stick pan) to ensure the dough adheres to the pan when pressing.
For the pumpkin: Combine the flour and salt and set aside. Cream the butter and sugar together. Add orange color. Add the egg and princess emulsion. When blended, add the combined flour and salt.
Fit the cookie press with the pumpkin disk. Form the orange dough to fit into the cylinder of the cookie press. Press the pumpkins. Bake at 400 degrees for 8 minutes or until the bottoms begin to turn golden. Allow to cool completely.
Fill a pasty bag fitted with tip #16 with green buttercream icing. Pipe the stem. Fill a pasty bag fitted with tip #2 with green buttercream icing. Pipe the curly q from the stem.
For the turkey: Combine the flour and salt and set aside. Cream the butter and sugar together. Add brown color. Add the egg and princess emulsion. When blended, add the combined flour and salt.
Fit the cookie press with the turkey disk. Form the brown dough to fit into the cylinder of the cookie press. Press the turkeys. Bake at 400 degrees for 8 minutes or until the bottoms begin to turn golden. Allow to cool completely.
Fill a tipless pasty bag with orange buttercream icing. Pipe the beak. Fill a tipless pasty bag with red buttercream icing. Pipe the wattle. Fill a tipless pasty bag with black buttercream icing. Pipe the eyes.
