Chocolate and Candy Coating

Candy coating, also known as candy chocolate, summer coating, bark, confectioner's coating and more is delicious and ideal to use for making suckers, dipped treats and molded candies. Candy coating is chocolate that has the cocoa butter removed and replaced with palm kernel oil or other fats meaning that it does not need tempering to be dipped and molded.

Candy coating in a tube makes painting molds, decorating cakes, cookies and candies extremely easy! Great for allowing kids to help decorate. Melt slowly in the microwave or with a heating pad to prevent burning the candy coating.

Chocolate or chocolate coating usually requires the addition of extra oil to flow easily through a chocolate fountain. Chocolate or chocolate coatings formulated for fountain use require little or no oil to be added. Enjoy dipping fruits, cookies, marshmallows and more in a delicious chocolate fountain. Most chocolate fountains require a minimum amount of chocolate to flow smoothly so be sure to check your manual. We approximate being able to dip 250 small food pieces in 1 pound of chocolate.

Real chocolate refers to chocolate that has both cocoa powder and cocoa butter (except white chocolate which does not have cocoa powder). The cocoa butter gives the chocolate an excellent taste and mouth feel, but makes it more difficult to work with because it must be tempered when dipping or molding. When using real chocolate as an ingredient, such as fudge, cheesecake or ganache, it does not need to be tempered. Sugar-Free candy coating from Merckens. This product can be melted and worked with the same way as any other candy coating. It contains carbohydrates and excessive consumption may have a laxative effect.
