Three Ways to Make Turtle Chocolates

Chocolate turtles may look intimidating, however, they are an easy candy to make at home. We will show you three ways to make this caramel, pecan, and chocolate treat. They are great to make for the holidays, hostess gifts, or just because.

Method One: Classic Turtles

Arrange five pecan halves on a parchment-lined sheet pan as shown in the photo below. Each five pecan halves will make one turtle (the head, feet, and tail). Repeat this step until you have created the desired amount of turtles. Take a square of prepared caramel, flatten it slightly, and place it in the center of each. Make sure caramel is touching each pecan halve.

A great tip to tell when your caramel is melted is that it will begin to shine. This will take approximately 5-10 minutes. Keep a close eye on them as you do not want the caramel to overheat. Overheating will cause the caramel to harden when cooled. While the turtles are cooling, prepare your chocolate. Melt chocolate wafers in a microwave at 30-second intervals. Once melted, use a spoon to top each turtle with chocolate. Try to completely cover the caramel to prevent oozing and sticking.

Method Two: Molded Turtles

Melt chocolate wafers in the microwave in 30-second increments. While your chocolate is melting prepare a sheet pan with parchment paper. Once melted, take your turtle-shaped chocolate mold and fill each cavity halfway. Take the back of your spoon and coat the entire cavity with chocolate as seen below. filling a turtle shaped chocolate mold with melted chocolate filling a turtle shaped chocolate mold with melted chocolate and spreading with spoon Once each cavity is completely coated take your mold and tap it onto your work surface to eliminate air bubbles. Turn your mold over, gently shake, and allow the access chocolate to pour onto your parchment paper. Take a spatula and wipe away any access chocolate from the top of the mold.

Remelt your leftover chocolate and add caramel bits and pecan pieces.
