Ingredients

  • White Decorating Buttercream Icing
  • #868 (8B) Large Open Star 5/8" Opening Stainless Steel Piping Tip
  • White Rolled Fondant
  • Food Color Gel
  • Cookie Cutter Set-Round, Scalloped Edge
  • Cutter Set- Round
  • Snap Together Letter Embossers by Autumn Carpenter
  • Snap Together Number Embossers by Autumn Carpenter
  • Piping Gel

Instructions

Prepare Fondant Toppers:
Roll out one color of fondant to an even thickness.
Use a scalloped cutter to cut out shapes from the fondant.
Roll out a complementary color of fondant.
Use a round cutter that fits within the scalloped cutouts to cut out rounds.
Personalize the Toppers:
Emboss the rounds with the names of graduates and "Class of YEAR".
Attach the embossed rounds to the scalloped cutouts using piping gel.
Allow the fondant toppers to dry overnight to harden.
Prepare the Cupcakes:
Pipe a swirl of buttercream frosting onto each cupcake using a piping bag and tip.
Create Fondant Scrolls:
Roll out white fondant to an even thickness.
Use a pastry wheel to cut strips of the white fondant.
Roll up each strip into a scroll shape.
Use royal icing to pipe a tie on each scroll.
Assemble the Cupcakes:
Once the fondant toppers are dry, place them gently on top of the buttercream swirls.
Place the fondant scrolls on top of another set of buttercream swirled cupcakes.
