Instructions
Melt Chocolate:
Place chocolate wafers in a microwave-safe bowl.
Microwave in 30-second increments, stirring after each until fully melted.
Prepare Mold:
Line a sheet pan with parchment paper.
Fill each cavity of the turtle-shaped chocolate mold halfway with melted chocolate.
Use the back of a spoon to coat the entire cavity with chocolate.
Tap the mold gently on the work surface to eliminate air bubbles.
Turn the mold over, shake gently, and let excess chocolate pour onto the parchment paper.
Wipe away any excess chocolate from the top of the mold with a spatula.
Allow the mold to sit for approximately 20 minutes at room temperature or 10 minutes in the fridge to set.
Fill the Turtles:
Fill each turtle shell with a layer of pecans, then a layer of caramel, and top with a layer of toasted coconut dough.
Fill the remaining space in the mold with melted chocolate and sprinkle the surface with toasted coconut.
Allow the mold to sit at room temperature until fully set.
Release and Decorate:
Turn the mold over and gently release the chocolate turtles.
Attach a candy heart to each turtle for a Santa hat using buttercream.
Trim the hat with additional buttercream.
Cut Airhead Extremes lengthwise and tie them around the turtles to create scarves.
