Gum Paste Recipe Using Tylose

Recipe for Making Gumpaste with Tylose

Because it is slightly more durable than fondant, gum paste can be rolled into very thin sheets, making it ideal for ruffles and other delicate accents without the risk of tearing. It does, however, dry quickly, so it should be kept covered when not in use to prevent premature hardening. While gum paste is technically edible, it is not recommended for consumption or for covering cakes, as it becomes quite hard once set.

Ingredients

  • 1 egg white
  • 1 cup sifted powdered sugar
  • 2 rounded teaspoon tylose
  • *vegetable shortening

Instructions

Beat egg white lightly. Add powdered sugar slowly until a soft peak is formed. Add tylose. The mixture will immediately thicken. Gradually add more powdered sugar until a pliable texture is achieved. *Rub a little vegetable shortening on your hands and work paste thoroughly. Gumpaste should not be sticky or hard. Paste is ready to use immediately. Store in a sealed plastic bag in a sealed plastic container for up to 3 months.
