Melt Chocolate: Melt chocolate candy coating in the microwave using 30-second intervals, stirring between each interval until fully melted. Transfer the melted chocolate to a squeeze bottle.
Fill the Mold: Fill each cavity of the deep fluted round mold with the melted chocolate. Gently tap the mold on the work surface to release any air bubbles.
Create Chocolate Shells: Invert the mold onto a parchment-lined baking sheet to remove excess chocolate and create a chocolate shell. Use a bench scraper to clean up the edges of the shells. Place the mold in the freezer for 10 minutes.
Prepare Caramel Filling: Transfer soft caramel to a pastry bag.
Fill the Shells: Fill the chocolate shells with the soft caramel and caramel bits, leaving room at the top to seal the candies with more melted chocolate. Gently tap the mold to help fill in cracks and smooth the caramel.
Seal the Chocolates: Add more melted chocolate to seal each piece of candy. Gently tap again to smooth the chocolate.
Set the Candies: Place the mold back in the freezer for another 10 minutes.
Release and Clean Up: Allow the candies to come to room temperature before inverting the mold to release the pieces. Use a paring knife to clean up any messy edges.
