FLAVORING CHOCOLATE AND COATINGS- If you want to flavor your chocolate or candy coating, you MUST use oils or concentrated flavors. Extracts CAN NOT be used. (They are water based and may thicken and ruin your chocolate and coatings.) We recommend adding 12-15 drops per pound. COLORING CHOCOLATE AND COATINGS- If you want an exact color you may add candy color which is oil based. Cake colorings are oil based and can ruin your candy. Caution: To much coloring can stain tongues and give a bitter taste. Start with a shade close to the color you are desiring. Example- you want royal blue- start with the blue chocolate, and add blue candy color. Do not start with white. Black- start with cocoa dark and add black color. Be sure to have paramount crystals on hand.
