Instructions
Prepare your favorite pie crust recipe.
Roll out the dough evenly using flour and a rolling pin.
Use the bottom side of the pocket pie crimper to cut the dough.
Place the cut dough in the crimper.
Add about ¼ cup of apple pastry filling.
Fold the pocket pie crimper to seal the dough. If needed, moisten the edges with water before crimping.
Place the sealed pies on a parchment-lined baking sheet.
Use a paring knife to cut a slit in the tops of the pockets for venting.
Brush the pies with an egg wash made from 1 egg and 1-2 tablespoons of water.
