Prepare the Chocolate Nests: Melt the cocoa lite candy coating in a microwave-safe bowl at 30-second intervals, stirring in between, until melted. Transfer the melted coating to a tipless piping bag. Turn the semi-hemisphere mold upside down so the dome is facing up. Squeeze chocolate squiggles all over the dome to create a nest-like appearance. Place the mold in the freezer to harden. Gently remove when hardened.
Make the White Chocolate Bunnies: Melt the white candy coating as above and stir in the bright jimmie mix. Transfer the melted coating to a tipless piping bag. Squeeze the mixture into the bunny mold. Tap the mold on the work surface to release any air bubbles. Place the mold in the freezer to harden. Once the mold is cloudy, the candies will pop right out.
Prepare the Cupcakes: Bake your favorite cupcake recipe according to its instructions. Allow the cupcakes to cool completely before decorating.
Prepare the Buttercream: Prepare your favorite buttercream and color it green. Transfer the buttercream to a piping bag fitted with a grass piping tip.
Assemble the Cupcakes: Pipe the green buttercream onto the cooled cupcakes to resemble grass. Carefully place a chocolate nest on top of each cupcake. Pipe some green grass in the base of the nest. Nestle a white chocolate bunny into each nest. Arrange Easter egg gummies around the bunny. Sprinkle carrot and Easter egg-shaped sprinkles over the grassy buttercream.
