Instructions
To make these cupcakes, start by making your favorite cake mix or recipe. For this recipe we used
gluten free yellow cake mix. Once your batter is mixed, portion into a lined cupcake pan using a 4 tablespoon scoop. Bake your cupcakes according to your recipe then, follow them to cool in the pan for 5 minutes before transferring to a cooling rack. Once your cupcakes are completely cool, use a cupcake corer or paring knife to remove the centers of the cupcakes.
Next, create a sprinkle mix with your desired sprinkle colors and type. For this recipe we used a mix of rose gold sanding sugar, sugar crystals, and rock candy. Use a teaspoon to portion the sprinkle mix into the center of each cupcake. Fill the cupcakes about ¾ full with your desired sprinkle mix. Once all the cupcakes are filled, pipe a dollop of buttercream in the center of your cupcakes to seal the sprinkles inside.
Then, using a large open star tip and white buttercream, pipe a swirl on top of the cupcake and top with sprinkles of your choice. For this recipe we used rose gold sanding sugar for a light dusting on top of the cupcakes. Additional toppers or edible glitter can be added at this time. Serve your cupcakes or place them in a sealed container for up to 3 days.
