Tips & Tricks for Molding & Dipping Cake Pops

  • Brite White Chocolate Melts
  • Paramount Crystals
  • Sucker Sticks 6 x 5/32"
  • Styrofoam Sheet Cake Dummies
  • Baker's Half Sheet Pan

Instructions

Start by mixing your favorite cake and icing to create the cake pop filling. Crumble your cake into small pieces. If your cake is too moist, let it sit out overnight to dry out. Start by adding 2 tablespoons of buttercream to 2-3 cups of crumbled cake. With gloved hands, mix the two together until well combined. Test the consistency of the filling by pressing it into a ball. If it holds together well and does not have any cracks then it is ready to use. Add sprinkles to the filling if desired. Gently mix together to evenly distribute the sprinkles.
Use a cookie scoop to portion each cake pop. Use a 3 tablespoon scoop for larger cake pops or a 1 ½ tablespoon scoop for a bite-sized cake pop. Squeeze filling together and then roll into a ball and place on a lined cookie sheet. You want to be sure the filling is packed tightly and holds its shape. Place in the refrigerator while preparing the chocolate.
Melt candy coating in the microwave using 30-second intervals. Stir in between each interval to evenly distribute heat. If the chocolate is too thick, add some paramount crystals and stir until fluid. Use 2 tablespoons of paramount crystals to one pound of chocolate. Microwave for 15-20 seconds and stir well. The chocolate should be warm to the touch but not hot. If the chocolate is too hot, it will not evenly coat the cake pop. Let the chocolate cool down for about 10 minutes at room temperature stirring every few minutes.
Dip a sucker stick into the chocolate and then place halfway into the cake pop. Once the sticks are inserted, use your finger to wipe the excess chocolate ring from the cake pop. Test the temperature of the cake pop and the chocolate. They should be close in temperature to dip. If the cake pops are too cold the chocolate will crack once it has set up.
When you are ready to dip, reform the cake pop to make sure it is rounded. Dip in the chocolate, carefully rotating the cake pop to make sure the chocolate does not go too far up the stick. Once the cake pop is covered, shake it gently over the melted chocolate to remove excess. Scrape the bottom on the side of the bowl and place on a parchment-lined baking sheet. You can leave the chocolate plain to decorate later or you can immediately add sprinkles. These are referred to as pop down cake pops.
Another way to situate cake pops is by inserting the bottom of the stick into a styrofoam block after dipping. Shake the cake pop upright to remove excess chocolate and allow the excess to drip from the bottom. Use your finger to wipe excess chocolate from the base of the stick.
To decorate the cake-down cake pops, rotate the bottom edge of the cake pop in the melted chocolate and immediately add sprinkles. Fill a tipless bag with the remaining melted chocolate. Drizzle the cake-up pops and immediately add sprinkle. Use themed sprinkles and candy shapes to elevate your special occasions.
For Gender reveals, color your cake batter before baking or add gender-colored sprinkles to the cake pop dough.
