Create Coconut Fruit Chews

With a simple layering technique and a touch of sugar for extra sweetness, this recipe makes creating these delightful chews both easy and enjoyable. Dive into the process and enjoy making these delightful Coconut Fruit Chews!

Ingredients

  • 4 cups coconut dough, divided
  • yellow, pink, and green food color
  • lemon, raspberry and lime concentrated flavors

Instructions

Knead pink food color and 15 drops raspberry flavor into 1 cup coconut dough. Knead yellow food color and 15 drops lemon flavor into 1 cup coconut dough. Knead green food color and 15 drops lime flavor into 1 cup coconut dough. Leave one cup of coconut dough unflavored and uncolored. Place the green mixture on parchment paper or silicone mat and pat into a rectangle 1/4” thick. Place the yellow mixture on parchment paper or silicone mat and pat into the same size rectangle as the green. Put the yellow on top of the green. Repeat with the white and pink. Cut into 1" squares and roll in sugar.

Variation: A thin layer of melted caramel (commercial or Basic Caramel Recipe) may be added on the center layer.
