In a large bowl, dissolve a 6 oz. package lime gelatin with 2 cups boiling water. It takes about 2 minutes to get the gelatin all dissolved. Stir in 1 3/4 cups cold water. Set aside until just beginning to set. Whip 1 1/2 cups chilled evaporated milk, until thick. In another bowl, place 2 cups cream cheese and beat until smooth. Gradually beat evaporated milk into the cream cheese until thoroughly combined. Fold gelatin into the cream cheese mixture until evenly mixed. Fill the Shamrock Pantastic Pan with water, then dump so the pan is wet. Pour the mixture into the dampened pan. Put into the refrigerator until set. When ready to serve, unmold (place the pan in hot water to loosen) onto a serving dish. Decorate with lime slices and kiwi slices.
