  • 1 box chocolate cake mix
  • 4 cups buttercream icing-divided
  • peppermint oil
  • green and pink food coloring
  • 8" cake pan
  • pan grease
  • cake leveler
  • peppermint crunch
  • spatula
Preheat oven to 350 degrees. Prepare two 8" round cake pans with pan grease or spray with cooking spray. Mix cake batter according to package directions and pour into prepared pans. Bake. Stir 6 drops peppermint oil into 3/4 cup buttercream icing. Mix in green food coloring to achieve a light green. When cake is cool, level each layer, then stack with green buttercream icing between layers. Mix pink food coloring and 10 drops peppermint oil into the remaining icing and ice the cake. Before icing crusts, sprinkle top of cake with peppermint crunch.
