Ube Flavored Donuts

  • 2.5 cups All-Purpose Flour
  • 3/4 cup Granulated Sugar
  • 1.5 tsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 4 TBSP. Unsalted Butter, Melted
  • 2 TBSP. Vegetable Oil
  • 2 Eggs
  • 3/4 cup Milk
  • 1 TBSP Ube Emulsion
  • ICING RECIPE:
  • 1 cup Powdered Sugar
  • 3-4 TBSP. Milk
  • 1-2 tsp. Vanilla Extract
1. Preheat oven to 350F and lightly grease a donut pan. 2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. 3. In another bowl, whisk together butter, oil, eggs, milk, and ube emulsion. 4. Mix the wet ingredients into the dry ingredients. Gently stir the mixture so there are no lumps in the batter. Do not overmix. 5. Fill each cavity 3/4 full. 6. Bake for 8-10 minutes then cool on a wire rack. FOR THE ICING: Mix ingredients together until smooth and desired consistency is achieved.
