Gourmet Caramel Corn
Ingredients and Supplies
  • 1 bag popped microwave popcorn-7 cups
  • 1/2 pound of fancy mixed nuts
  • 1 pkg. CK Hard Candy Mix
  • 1/3 cup water
  • 1 tablespoon butter
  • 1/2 teaspoon concentrated butter flavor (1/2 dram)
  • 1 teaspoon concentrated caramel flavor (1 dram)
  • 1/3 pound Cocoa Dark or tempered real chocolate
Pour popcorn into large bowl. Spray a second large bowl and a large wooden spoon with cooking spray and lift popcorn from first bowl to second bowl, sifting out any kernels. If adding nuts, use 2 1/2 cups less popcorn and stir nuts into the popcorn. Thoroughly mix a package of CK Hard Candy Mix with water; be sure the sugar is all very moist. Cover and let come to a rolling boil. Remove lid and put thermometer into pan. Cook to 295 degrees. With sprayed spoon, stir in butter and concentrated flavors. Pour hot mixture over popcorn and stir. Spread coated popcorn onto a surface which has been sprayed with cooking oil or a silicone mat. Drizzle melted chocolate or Cocoa Dark over the popcorn, let set up, then break into pieces.
