Lemon Snowballs
Ingredients and Supplies
  • 1 cup butter
  • 1/2 cup powdered sugar + extra
  • 1 teaspoon Flavor Mill Lemon Extract
  • 2 1/4 cups flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans
  • 1 teaspoon grated lemon peel
  • 1/2 cup lemon crunch (broken into smaller pieces)
Heat oven to 400 degrees. Beat butter, 1/2 cup powdered sugar, grated lemon peel and lemon extract in a large bowl on medium speed. Blend 1/4 cup of lemon crunch into the flour. Stir flour mixture and salt into the butter/sugar mixture. Stir in nuts. Make balls using 26 mm cookie scoop . Place about 2" apart on baking sheet lined with parchment paper or a silicone mat. Bake until set, but not brown. Roll in powder sugar; wait 10 minutes. Roll in remaining lemon crunch.
