Lemon Sandwich Cookies

  • 1 1/2 cups powdered sugar, sifted
  • 1 cup butter
  • 1 egg
  • 1 teaspoon vanilla flavor
  • 1/2 teaspoon almond flavor
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • Lemon curd
  • Powdered sugar in a shaker
  • White edible glitter
Mix together flour, baking soda and cream of tartar. Cream butter and sugar together until light and fluffy. Stir in egg, vanilla and almond flavor. Stir into flour mixture. Fill cookie press with dough. Wrap remaining dough in plastic wrap until needed. Attach disc which is straight on one side and jagged on the other. Place parchment paper or a sililcone mat on a cookie sheet. Pipe dough into straight lines the distance of the cookie sheet with the serration on top. Bake at 375 degrees until just slightly brown, approximately 6 minutes. As soon as removed from oven, cut lines of cookie into equal-sized rectangles. When cool, make a sandwich with two cookie rectangles by spreading one of the rectangles with lemon curd. Shake powdered sugar and sprinkle edible white glitter over the cookie sandwich.
