  • 2 cups (12 oz.) Guittard Semisweet Chocolate Chips
  • 1/2 cup (1 stick) butter
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 2 cups (12 oz.) Guittard Green Mint Chips
  • 1/2 pound dark chocolate candy coating, melted

Preheat oven to 350ºF. Line cookie sheets with parchment paper or silicone baking mats. Melt semisweet chips and butter in a microwave-proof bowl at medium power (50%or lower) for 2-3 minutes, stirring well after each minute initially, then at 30 second intervals until smooth. Set aside to cool. In small bowl combine flour, baking soda and salt; set aside. In large mixing bowl, beat eggs, sugar and vanilla until light. Blend in melted chocolate then dry ingredients. Stir in green mint chips and chill for 10-15 minutes or until stiff. Using a cookie scoop, drop by rounded teaspoons onto lined cookie sheets. Bake 8-10 minutes; cookies will be soft in center but will harden as they cool. Drizzle melted Cocoa Dark coating over cooled cookies.
