With a wire whip, whip 3 1/2 tablespoons water with 1 tablespoon dried egg whites. Put 2 tablespoons of the water/egg white mixture into a large bowl. Stir 3/4 to 1 teaspoon cinnamon oil or concentrated flavor into the egg mixture. Stir 5 cups whole pecans into the egg white/cinnamon mixture until pecans are well coated. Pour green or red sanding sugar over nuts and mix until pecans are well coated. Spread on ungreased baking sheet and bake at 300 degrees for 30 minutes.
