Ingredients and Supplies
  • 2½ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • ¼ teaspoon salt
  • 2 egg whites
  • 1 teaspoon 1 teaspoon Pure Vanilla Extract
  • ½ cup finely chopped pecans
  • candy thermometer
  • parchment paper
Cook sugar, corn syrup, water and salt to 248ºF. Cover and boil for 3 minutes. Uncover and place thermometer in pan. Beat egg whites until stiff but not dry. When syrup is 248ºF slowly pour about one-half of the syrup over the egg whites, beating constantly with the mixer. Cook remaining syrup to 272ºF. Pour the remaining syrup over the candy very slowly, beating constantly. Beat until mixture begins to lose its gloss and soft peaks form. Mix in vanilla and nuts. Drop by teaspoonfuls on parchment paper. Store divinity in an air-tight container. Makes approximately 50 pieces.
