Coconut Flake Candy
Ingredients and Supplies
  • sugar
  • corn syrup
  • water
  • candy thermometer
  • butter
  • baking soda
  • salt
  • salted peanuts
  • raw chip coconut
  • cookie sheet
  • non-stick cooking spray
Cook 3 cups sugar, 1 3/4 cups light corn syrup and 1 cup water to 295 degrees. Remove from heat. Add 2 tablespoons butter, stirring until melted. Stir in 3/4 tablespoon soda and 1 teaspoon salt, blending well. Quickly stir in 1 3/4 cups salted peanuts and 4 cups raw chip coconut. Mixture will be very stiff. Turn out on a butter marble slab or well greased cookie sheet. Spread as thinly as possible. Turn over after a few minutes. As soon possible, pull the candy to get it thinner. Let cool completely and break into small pieces. Store tightly covered. Makes about 40 pieces.
