Ingredients and Supplies
2½ cups all-purpose flour
1 cup blanched whole almonds
2/3 cup granulated sugar
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt
1 cup (2 sticks) unsalted butter, cut into tbls.
¼ teaspoon Lorann Almond Bakery Emulsion
¼ teaspoon Lorann Lemon Bakery Emulsion
1 cup raspberry pastry filling
2-4 tablespoons confectioners’ sugar

Pulse the flour, nuts, granulated sugar, cinnamon, cloves, and salt together in a food processor until nuts are finely ground. With machine on, add butter a few pieces at a time through feed tube and process until evenly combined. Pulse in almond and lemon emulsions until mixture begins to form large, moist clumps. Scrape dough onto piece of plastic wrap, form into 2 flat discs, cover completely with plastic wrap and refrigerate until firm enough to roll out, at least 2 hours or overnight. Preheat oven to 325ºF. Line two cookie sheets with parchment paper or silicone mat. Roll 1 disc out to ¼-inch thickness on floured surface. Using Linzer Cookie Cutters, cut out large shapes and place 1 inch apart on cookie sheet. Cut out a small shape from the center of half the cookies and place on separate cookie sheet. Repeat with remaining dough. Bake until light golden brown around the edges, about 10 minutes. Place cookie sheets on wire rack to cool for about 10 minutes before transferring cookies to wire rack to cool completely. Cookies may be stored in an airtight container up to 2 weeks. On day of serving, pipe or spread a thin layer of pastry filling on the flat bottoms of the solid cookies. Place cookies with cutout centers on a piece of parchment paper. Use a fine-mesh strainer to sieve confectioners’ sugar over the cookie tops. Carefully place the dusted cookie top on top of the raspberry filling covered cookie bottom. Place remaining pastry filling in a pastry bag, snip off the tips and carefully pipe into shaped windows to fill up the cutout space.
