Ingredients and Supplies
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups granulated sugar
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • 2 cups large whole pecans
In a large, heavy saucepan combine buttermilk and soda. Using a wooden spoon, stir in sugar. Cook over medium heat until mixture boils, stirring constantly. If sugar crystals have formed on the sides, wash down with a wet pastry brush. Cook to 236º. Remove from heat. With a wooden spoon, stir in butter, vanilla and pecans. Continue stirring until mixture is creamy. Spoon 2” patties onto a silicone mat or parchment paper.
