Ingredients and Supplies
  • 1 cup granulated sugar
  • 1 tablespoon cider vinegar
  • 1 cup dark corn syrup
  • 1 tablespoon baking soda
  • Cocoa dark candy coating
Line a 9-inch baking pan with parchment paper so that paper overhangs by a few inches on sides. Butter the paper generously. Stir together sugar and corn syrup in a large deep saucepan. Bring to a boil over medium heat and cook to 300°F (hard-crack stage). Watch carefully to prevent it from boiling over. Immediately remove from heat. Add baking soda and vinegar and whisk vigorously to combine thoroughly. The mixture will lighten and foam up. Quickly scrape into prepared pan and place on rack to cool completely. Unmold by pulling parchment up and out of pan; peel off parchment. Cut into chunks 1 to 2 inches across. Melt candy coating. If using real chocolate temper chocolate. Dip chunks into chocolate. Remove and let excess chocolate drip back into bowl. Place candy on parchment paper. Allow to set firm. Yields 45 pieces.
