Ingredients and Supplies
2 1/2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla
1/2 cup finely chopped nuts, optional

Combine sugar, corn syrup, water and salt in a heavy, 2-quart saucepan. Cook and stir until sugar dissolves and the mixture comes to a boil. Cook to 248º. Just as the syrup is reaching 248º, beat egg whites until stiff peaks form. Very slowly pour syrup in a thin stream over beaten egg whites, beating constantly with the mixer on medium speed. Increase speed to high and continue beating. Add vanilla. Continue beating until mixture begins to lose its gloss and soft peaks form. Immediately drop by teaspoons onto a silicone mat or parchment paper. Sprinkle with nuts if desired.
