Caramel Pecan Fudge

  • 2 2/3 cups sugar
  • 1 cup butter
  • 1 1/3 cups non-dairy liquid cream substitute
  • 1/4 teaspoon salt
  • 4 cups miiniature marshmallows
  • 12 oz. milk chocolate or candy coating
  • 4 oz. dark chocolate or candy coating
  • 1 teaspoon vanilla
  • 1 lb. caramel bits
  • 1 cup chopped pecans
Combine sugar, butter, cream substitute and salt in a large saucepan. Cook to 238º without stirring. Remove from heat and stir in marshmallows. Melt chocolates together. When hot mixture becomes about the same temperature as the melted chocolate, stir chocolate into the cooked mixture. Stir in vanilla, caramel bits and pecans. Pack into a parchment-lined 9" square pan. Cut into squares when cool.
