If candies are grainy, undercooked or overcooked (not scorched) they may be salvaged. Test thermometer for accurate temperature reading. Place flawed candy in a heavy saucepan. Add approximately 1/2-1 cup water and stir over low heat until water is incorporated. Cook according to recipe directions. It may be necessary to add flavoring again. Never add milk or cream when restoring the candy.
