Heavy Saucepans: For recipes requiring cooked candies, a very heavy saucepan will provide even heat and helps prevent scorching. When a recipe calls for milk or cream, use an extra large pan because milk will make the candy cook up high in the pan. Watch candy as it cooks and reduce heat if it threatens to boil over. If candy does boil over, remove pan from heat and use a different burner to finish cooking candy or clean the burner. The candy will be less likely to boil over again if it is poured into a larger pan or the side s of the pan wiped with a damp cloth. Double Boilers: A double boiler is a two-part pan used for melting chocolate.
