Invert Sugar
Ingredients and Supplies
  • 4 cups granulated sugar
  • 1 1/2 cups water
  • 1/4 teaspoon citric acid or juice of 1 lemon
Combine all ingredients in a heavy 4-quart pan. Bring to a boil, stirring constantly to dissolve sugar. Lower heat and simmer for 1/2 hour, stirring occasionally. Store in tightly covered container.
