A candy thermometer is used for cooked candies and usually has a range of 100°-400°. A good thermometer is very important. Even with the best thermometer, readings may vary from day to day, so test the thermometer each day it is used. To test the thermometer, place it in enough water to cover the mercury at the base of the thermometer. Bring water to a boil. Let water boil for several minutes or until mercury rises no higher. Read the temperature. If it reads 212°, cook candy to the exact degree the recipe instructs. If the reading is higher, cook candy as many degrees higher as the thermometer reads over 212°. For example, if thermometer reads 214° and your recipe calls for 236°, cook candy to 238°. If thermometer reads 210° and your recipe calls for 236°, cook candy to 234°.
