-Fudge was stirred when too hot.
-Hard candy that is not properly wrapped may absorb moisture and become grainy.
-Crystals formed on the side of the pan may cause candy to grain if side of the pan was scraped while pouring brittles and fondant.
To avoid this, stir ingredients thoroughly before cooking, place lid on pan and leave on until candy is boiling rapidly. The steam hits the lid and keeps crystals from forming on the side. Avoid stirring while candies are being cooked. This method works for candies with non-dairy ingredients.
