Prepare cupcake glaze and ice cupcakes. Allow glaze to just set before attaching sugar beads and royal icing decorations. Poke the side of a cupcake using a wooden skewer or toothpick. Insert the sucker stick. Cut a fruit slice in half and roll into a ball. Coat the colored sanding sugar. Attach rolled fruit slice to end of sucker stick.
Cupcake glaze: 1 pound real chocolate, 1/2 cup whipping cream, and 6 tablespoons butter. Put all ingredients in a microwave safe bowl. Microwave for 30 seconds. Stir. Place in microwave for a few seconds at a time until ingredients are warmed and chocolate is melted. Do not overheat. Remove from microwave and stir until glaze is shiny and all ingredients are well blended. *If icing sets up before all cupcakes are glazed, place glaze in microwave for three-second intervals, stirring thoroughly between each interval. Yield: 2 cups.
