Food-grade silicone is definitely hot in the baking industry!  It started with baking mats, then
silicone moved onto utensils.  Now silicone is all over the kitchen in a variety of colors and shapes.

Why use silicone? The non-stick and flexible properties of silicone allow baked goods to be easily removed by flexing and pushing the molds. The molds can be used for baked goods and for cold goods such as ice cream, jello, etc. It only takes a minute or two for the silicone to cool, making the baking process run smooth!

Should silicone be treated differently than traditional bakeware? In most cases silicone bakeware can be used as you would any bakeware. If it is necessary, place the silicone bakeware on a baking sheet for ease of placement in the oven. Cooking times may vary slightly. Silicone bakeware may require less time. Do not use sharp utensils on the silicone. Silicone has a non-stick surface, however, most manufacturers recommend that you oil or butter the bakeware if the recipe recommends.
