Chocolate Peanut Mounds

Ingredients

  • 1 lb Cocoa Lite or Cocoa Dark Chocolate Wafers
  • 1/2 cup Salted Peanuts, plus extra if desired
  • 1 lb Dry Fondant Mix
  • 2 Tablespoon Heavy Cream
  • 6 Tablespoons Butter
  • 1 tsp Maple, if desired
  • Brown Food Coloring, if desired
  • 1-2 Tablespoons melted Paramount Crystals, if needed

Instructions

Prepare a baking sheet with a piece of parchment paper.
Prepare the dry fondant mix according to the package directions.

Add maple extract & brown food color if desired.
Stir in the dry fondant mix. Knead until smooth.
Form 3/4 inch balls with the help of a scoop and slightly flatten.

Melt the chocolate wafers & thin out with paramount crystals if needed.
Dip candy centers into chocolate with the help of a dippping tool and place onto parchment paper. We dipped the vanilla patties into milk chocolate & the maple patties into dark chocolate.

Allow the chocolate covered patties to set up completely.
Mix peanuts with the remaining chocolate. You want this mixture to be heavy on the peanuts, so feel free to add more if the mixture seems too heavy on the chocolate.

Spoon peanut and chocolate mixture on top of dipped fondant mounds.

For a more uniform look, assemble the chocolate pieces in a large candy cup.

Allow to set completely.
