DIY Valentine's Day Assorted Box of Chocolates

Making an assortment of chocolates is a delightful and rewarding process.

Ingredients

  • Cocoa Lite Milk Chocolate Melts
  • Cocoa Dark Chocolate Melts
  • Paramount Crystals
  • Squeeze Bottle - 8 oz
  • Fancy Rounds Chocolate Mold
  • Coconut Scoop-Ums Semi-Soft Candy Center
  • Mocha Cream Candy Center
  • Caramel Soft Cream Candy Center
  • Black Raspberry Soft Cream Candy Center

Instructions

Melt the Chocolate: Place chocolate candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between until the chocolate is fluid. If the chocolate is thick, add paramount crystals (1 tablespoon at a time) and stir until fluid. If crystals don't melt, microwave for 15-20 seconds and stir until desired consistency is achieved. Place in a squeeze bottle.
Prepare the Mold: Squeeze melted chocolate around the top edge of each mold cavity. Tap the mold on a work surface to evenly cover the inside and remove air bubbles. Invert the mold over a parchment-lined baking sheet to remove excess chocolate. Use a bench scraper to clean up the edges.
Refrigerate the mold for 5 minutes to set up the chocolate shells.
Add Candy Centers: Once the chocolate is set, add soft or scoopable candy centers. For soft centers, pipe them into each cavity, leaving space for sealing. For scoopable centers, gently press them into each cavity, leaving space at the top.
Seal the Mold: Use the squeeze bottle with melted chocolate to top each cavity. Add a small amount of chocolate and move it to the edge to seal in the centers.
Set Up Completely: Refrigerate the mold for 10-15 minutes until the chocolate is fully set. The mold will appear cloudy when the candy is ready.
Remove Candy Pieces: Tap the mold on the counter to release the candy pieces. If they don't come out easily, refrigerate for an additional 10 minutes and try again.
This process results in homemade filled chocolates with a smooth outer shell. Enjoy your delicious creations!
