Ingredients and Supplies
  • 1/4 teaspoon LorAnn’s coffee flavoring
  • ½ cup canola oil
  • ½ cup buttermilk
  • 1 teaspoon Vanilla Bean Paste
  • ½ cup firmly packed light-brown sugar
  • 2 eggs, lightly beaten
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup sugar
  • 2 tablespoons cocoa powder
  • 1 cup Callebaut real Semisweet Chocolate morsels

Preheat oven to 375ºF. In a medium-sized bowl, combine coffee flavoring, oil, buttermilk, vanilla and brown sugar. Stir to combine well. Whisk in the eggs. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Stir in the sugar and cocoa powder. Add the buttermilk mixture and stir until combined. Mix in the chocolate morsels. Fill greased or paper-lined muffin tins. Bake 20 to 22 minutes, or until a tester comes out clean. Cool. Fit one mini muffin into each cavity of this Christmas Tree Box.
