Real chocolate refers to chocolate that has both cocoa powder and cocoa butter (except white chocolate which does not have cocoa powder). The cocoa butter gives the chocolate an excellent taste and mouth feel, but makes it more difficult to work with because it must be tempered when dipping or molding. When using real chocolate as an ingredient, such as fudge, cheesecake or ganache, it does not need to be tempered.
