Tempering is the process of making real chocolate workable for molding and dipping. There are multiple methods for tempering chocolate, but none are as easy or foolproof as using a tempering machine. Simply add the appropriate amount of chocolate and the machine will melt, temper and hold the chocolate at a workable temperature.
