Cover 6" and 12" cake in red fondant and 9" tier in orange fondant. Roll out orange fondant and cut 1 1/2" wide strip to go around base of bottom tier. Use piping gel to attach ribbon to cake. Use 3 1/2" circle cutter to cut out orange circle for top tier and attach with piping gel. Roll out red fondant and cut out monogram, attach to circle with piping gel.
Melt red chocolate coating. Place round silicone mat on top of transfer sheet texture side up. Spread melted chocolate over mat being sure to fill entire cavity and scrape off any excess. Allow chocolate to harden and remove from silicone and transfer sheet. Repeat process using plain acetate paper instead of a transfer sheet. Attach plain and printed disks in random order around base of bottom tier, in rows on middle tier and in a single row around middle of top tier. Attach disks with a dot of melted chocolate.
