Ingredients and Supplies
For mosaic pieces:
transfer sheets- 1 for top, 2 for bottom layer
cocoa dark candy coating

CAKE INSTRUCTIONS
Bake and cool cake. Ice cake with chocolate fondant or use a chocolate ganache icing.

MOSAIC PIECES
Place chocolate transfer sheet, texture side up, on parchment paper. Place thinnest size perfection strips on both sides of the transfer sheet. Pour melted candy coating or melted and tempered real chocolate on top of the transfer sheet. Drag a cookie sheet with a straight edge over the perfection strips to smooth and have an even layer of chocolate. Place transfer sheet in refrigerator for five minutes. Peel back transfer sheet. Cut chocolate into small irregular squares, rectangles and triangles.

CHOCOLATE WRAP
Cut transfer sheet into strips long enough to cover the diameter of the cake. Tape strips together if necessary to fit the diameter of cake, lining up patterns if applicable. Make sure to tape the smooth side of the transfer sheet. Find the center point of the transfer, and cut at an angle from one side to the next from the center point. Place chocolate transfer sheet, texture side up, on parchment paper. Place thinnest size perfection strips on both sides of the transfer sheet. Pour melted candy coating or melted and tempered real chocolate on top of the transfer sheet. Drag a cookie sheet with a straight edge over the perfection strips to smooth and have an even layer of chocolate. Quickly lift the transfer sheet with the wet chocolate onto a clean area of the parchment paper to give the chocolate piece a clean edge. When the chocolate is just set, carefully lift the transfer and place around the cake. The chocolate is just set when it still has a couple of shiny patches, but most of the chocolate is dull. Place the wrapped cake in the refrigerator for 5 minutes. Peel back transfer sheet. Attach the mosaic pieces to the cake with melted candy coating or melted and tempered chocolate.

HAND MOLDING
The witch, pumpkins and kitty were all hand-molded from fondant.
