1 basic pie crust
1 tube lemon pastry filling
3/4 cup sugar
1/2 cup water, boiling
1/4 cup meringue powder

Spread one 2 pound package lemon pastry filling into a baked pie crust. Meringue- Dissolve granulated sugar in boiling water. Add meringue powder and beat to high peak. Spread meringue over the lemon filling and bake in a preheated 400 degree oven for 8-10 minutes until the peaks of the meringue are golden brown. Cool at room temperature, then store in the refrigerator until serving.
