Coconut Layers: Divide 2# of coconut dough into thirds. Color 1/3 red and flavor with 8 drops concentrated raspberry flavoring. Color 1/3 green and flavor with 8 drops lime concentrated flavor. Leave 1/3 as is. Melt heaping cup cocoa lite wafers. Stir in 1/3 cup corn syrup. Put into refrigerator a few minutes to harden. Pat each ball of coconut dough and the chocolate mixture into same-sized rectangles on parchment paper. Put parchment paper on the top of each rectange and roll each rectangle about about 1/4" thick. Stack the rectangles, removing the parchment paper. Do not put the chocolate rectangle on the top or bottom. Cut into pieces about 1"x1 1/2", then roll each piece in sugar. Makes about 56 pieces. To retain freshness, wrap each piece of candy in plastic wrap.
Snowballs: Melt 1 pound white candy coating. Stir in 1 cup coconut dough and 1/2 cup chopped pecans. Chop 1/4 cup red wafers and 1/4 cup dark green wafers (not too small). Stir the chopped wafers into the coating/coconut dough mixture. Note: coating/coconut mixture needs to cool, but not harden to be able to stir in the red and green pieces without melting them. Using a small cookie scoop to get consistant sizes, scoop out balls. Roll into perfect balls, then roll in desiccated coconut. Serve or give as gift in partitioned box.< /p>
