Use cookie cutters to cut ganache. For candy canes, dip entire piece of ganache in melted and colored coating. Lay on wax or parchment paper to dry. Using a small parchment bag filled with white candy coating, make stripes on canes. For cupcakes, cut transfer sheet into 1 1/2" x 1 1/2" squares. Dip bottom of cupcake in melted and colored coating and place on wax or parchment paper; lay transfer sheet square on top of wet chocolate. When dry, pull acetate paper off of cupcake. Dip top of cupcake in white candy coating; place on paper and add small red candy to top of cupcake.
