Luau Bark: Fruit, Coconut and Pecan Candy Recipe

This bark is the perfect treat for a summer get-together, a luau-themed party, or just a sweet escape from your daily routine. With its blend of tropical flavors and textures, it's like taking a mini vacation to an island paradise, one bite at a time.

We've used white chocolate candy melts in this recipe for a delicious, easy-to-make recipe. If using real white chocolate (ingredient list will list cocoa butter and/or cocoa liquor), then the chocolate should be tempered, or the bark will remain tacky or have streaks throughout. Ingredients

  • 2 pounds white chocolate
  • 1 1/2 cups pecans, chopped
  • 1 1/2 cups toasted coconut
  • 1 1/4 cups miniature marshmallows
  • 1 1/4 cups dried apricots, pineapple or other dried fruit

Instructions

Lay out a large sheet of parchment paper onto the counter. If the white chocolate is in block form, chop the chocolate into uniform pieces. Place the white chocolate candy wafers or chopped chocolate into a microwave-safe bowl.
Melt the chocolate using 20 second intervals, stirring in between to ensure the chocolate melts evenly and doesn’t scorch. Continue melting until the chocolate is fluid.
Immediately add the remaining ingredients. Stir until all ingredients are incorporated.
Use a spatula and spread the bark as thin as possible on the parchment paper.
When the bark is just set, score using a pastry wheel, or allow to set up completely at room temperature before breaking into pieces.
