Clear Plastic Molds: Clear plastic molds are easiest to use for chocolate because of their flexibility and because they can be checked on the underside to see how the finished product will look. Cookie molds, cake pans and confection molds may also be used, but chocolate may be more difficult to release. Hard Candy/Cookie Molds: White plastic hard candy/cookie molds are ideal for hard candy recipes because they withstand heat. Use them also for chocolate and molded cookies. Rubber Molds: Rubber molds are best for butter and cream cheese recipes because the molds are flexible. Chocolate works in them, but may not come out as shiny as using plastic molds.
