If an exact color of chocolate or candy coating is desired, oil-based candy color can be added. Cake colorings are water-based and can ruin your candy. Caution: Too much coloring can stain tongue and give bitter taste. Example: If colors are navy and yellow, you may want to do yellow and white mints instead of navy. When adding color, the candy may thicken. Be sure you have some paramount crystals on hand to thin the candy if necessary. Cake coloring should be used in fondants and hard candy.
