SUPPLIES NEEDED FOR ALL RECIPES BELOW
Hard Candy Mix or Follow one of the recipes below
Food Coloring 
Concentrated Flavor or Oil 
Citric Acid:  (optional) Add this to your recipe for a more tart candy

Hard Candy Mix
Country Kitchen sells a prepared mix which all you have to do is add water,
coloring and flavoring for easy hard candy.   Simply follow directions on the
package.
Hard Candy Mix
Basic Hard Candy
1 3/4 cup sugar
1/2 cup water
1/2 cup light corn syrup
Dash of salt
1/4 to 1/2 teaspoon concentrated oil or flavors
In a small saucepan, combine sugar, water, corn syrup and salt.  Stir together until sugar
dissolves.  Cover and bring to rolling boil.  Remove lid, place thermometer in pan and cook
to 250°.  Add food coloring and continue cooking to 300°.  (Remove from heat at 295° as
temperature will continue rising to 300°.)  Let cool a few minutes.  Add flavoring oil and
cover 3 more minutes.  Pour into  greased molds or cookie sheets.
Hi-Sweet
Hard Candy with Hi-Sweet (#GU-6045) 
Hi-Sweet in this recipe help the hard candy from becoming tacky. 
1 cup sugar 
2 oz. warm water 
6 Tablespoons Hi-Sweet 
1 teaspoon concentrated oil or flavors 
1/16 teaspoon citric acid 
Food Color
Mix  together sugar, warm water and Hi-Sweet. Bring to boil and cook to 290°. Remove from
heat. After boiling ceases, stir in flavoring, coloring and citric acid (if desired). Pour onto
greased molds or cookie sheets. Break apart when cool.

Traditional Hard Candy Pieces
Follow one of the recipes above.  When
candy reaches proper temperature, pour
hot candy into a buttered 7 x 10" pan.
Cut with shears into strips as soon as
the candy is cool enough to handle.
Then cut into squares or diamond
shapes.   Or, Pour out very thin.  When
cooled, break into pieces.   When cold,
dust with confectioners sugar to
keep from sticking.

CK Molded Hard Candy Pieces
Follow one of the recipes above.  Spray desired hard
candy molds and funnel/ stopper with cooking
spray.  When candy reaches the proper temperature,
pour into funnel.  The stopper should be pushed
tightly to the small opening to prevent the hot candy
from escaping from the funnel.  Control the candy's
flow into the mold cavities by lifting the stopper up
and down.  One batch of our hard candy mix generally
fills about 3 hard candy molds.  Let set until cool.

spray.  When candy reaches the
proper temperature, pour into
funnel.  The stopper should be

Control the candy's flow into the
mold cavities by lifting the stopper
up and down.  One batch of our

3 hard candy molds.  Place a sucker
stick into the candy after filling
each mold.   Let set until cool.
Remove from mold.

Follow one of the recipes above.  Spray desired hard
candy molds and funnel/ stopper with cooking
spray.  When candy reaches the proper temperature,
pour into funnel.  The stopper should be pushed
tightly to the small opening to prevent the hot candy
from escaping from the funnel.  Control the candy's
flow into the mold cavities by lifting the stopper up
and down.  Let set until cool.  Remove from mold.

Harold's Molded Hard Candy Suckers and Pieces
Follow one of the recipes above.  Spray desired hard
candy molds (for 3-D molds, spray each half then clip
together and stand following directions included in 
mold package) and funnel/ stopper with cooking
spray.  When candy reaches the proper temperature,
pour into funnel.  The stopper should be pushed
tightly to the small opening to prevent the hot candy
from escaping from the funnel.  Control the candy's
flow into the mold cavities by lifting the stopper up
and down.   Let set until cool.  Remove from mold.
