Flavoring Chocolate
If you want to flavor your chocolate or candy coating, you MUST use
oils or concentrated flavors.    Extracts CAN NOT be used.  (They are
water based and may thicken and ruin your chocolate and coatings.) 
We recommend adding 12-15 drops per pound.
Concentrated Flavors and Oils are available in:
  • Lorann, 1 dram: Measured by drops (use threaded eye dropper).
  • CK Brand, 1/2 ounce: Built in dropper.
  • CK Brand, 8 ounce bottles: Measure by drops (use threaded eye dropper).

Coloring Chocolate

Pink Coating + White Coating =  Light Pink
You achieve lighter shades of a color by melting
white coating and adding melted colored coatings.

Pink Coating + Blue Coating + Cocoa Lite Wafers = Mauve
To achieve a color not available such as mauve, melt available colors separately, and starting
with the closest color, stir in other color(s). Amounts of color depend on the color of mauve desired. 
If you want a exact color you can add Candy Color which is oil based. Cake
colorings are water based and may ruin your candy.  Caution: Too much
coloring may stain tongue and give bitter taste.  Example, if colors are
navy and yellow, you may want to do yellow and white mints instead of navy.
When adding color, the candy may thicken. Be sure you have some
paramount crystals on hand to thin the candy down.
Oil based Candy Colors are available in:
  • Chefmaster: Built in dropper
  • Elaines' Colors: Built in dropper
  • Wilton Candy Color Kit: Use a toothpick to add color.
For a darker color, start with color of wafers available and add enough candy color to achieve the result
desired. Caution: Too much coloring may stain tongue and give bitter taste.
